Roasted Broccoli with Fennel and Pickled Shallots

No one can resist this warm, flavor-packed broccoli dish to be served as a side or add some protein or a handful of nuts for a main. There are few foods as beneficial for women as broccoli with its high content of Vitamin C which helps build collagen for healthy skin, hair and nails along with components to fight breast cancer, build bone health and reduce bad cholesterol.

Ingredients

  • 2 heads broccoli,chopped

  • 1 fennel bulb, sliced thin (or use a mandolin)

  • 1 shallot bulb, sliced into thin round rings

  • Juice from 1/2 lemon

  • 1 teaspoon lemon zest

  • 1/4 cup apple cider vinegar

  • 1/4 cup extra virgin olive oil

  • 1 teaspoon avocado oil

  • 1/2 teaspoon sea salt

Instructions

  1. Preheat oven to 425 degrees.

  2. Place shallots in a small bowl. Cover with vinegar, salt and olive oil. Set aside.

  3. Assemble broccoli and fennel is a deep baking dish. Toss with a smidgen of avocado oil and sea salt..

  4. Roast broccoli and fennel for 25 minutes.

  5. Add lemon zest and lemon juice to shallot mixture.

  6. Toss broccoli and fennel with shallot mixture and serve immediately.
