Roasted Cauliflower with Almond Sauce

Truly comfort in a bowl, this easy weeknight side dish is rich in magnesium and Vitamin C which are essential for a healthy stress response.

Serves: 4

Ingredients

  • 1 head cauliflower, cut into florets

  • 1 tbsp avocado oil

  • 1/2 cup smooth almond butter

  • 1 tbsp miso paste

  • 1 tablespoon grated ginger

  • 1 tablespoon fish sauce (optional)

  • 2 tablespoons raw honey

  • 1 tbsp green onions, minced

Instructions

  1. Preheat oven time 425 degrees. Place cauliflower in a single layer on a baking sheet and drizzle with avocado oil and sea salt.

  2. Roast for 25 minutes or until golden brown.

  3. Meanwhile, whisk remaining ingredients together in a bowl.

  4. Toss warm cauliflower together with sauce and sprinkle with green onions and serve.
