Chocolate Avocado Mousse

Decadent and dreamy… yet dairy-free and full of my favorite hormone-balancing superfoods.

Serves 2

Ingredients

  • 1 avocado

  • 1/3 cup tahini

  • 1 1/2 tbsp maple syrup

  • 3 tbsp cacao powder

  • 1/4 cup coconut milk (boxed or canned)

  • 1 tbsp pomegranate seeds (or your favorite berries)

  • 1 tbsp cacao nibs

Instructions

  1. Blend avocado, tahini, syrup, cacao powder and coconut milk in a food processor. Alternately, mix really well in large bowl.

  2. Spoon into two serving cups. Top with pomegranate seeds and cacao nibs and enjoy!

Storage: Cover tightly if not enjoying right away. Keeps 1-2 days in the fridge.
