Garlicky Green Dressing

Full of garlic and vitamin C, this dressing can make even the most simple meal or snack a flavorful immune builder. Garlic is an essential staple in my kitchen as a powerful builder of immune resilience and antimicrobial herb. It can help prevent infections such as the common cold and flu, as well as infections of the digestive tract. The volatile oils in garlic are excreted through the lungs, making it especially beneficial for infections of the respiratory system.

Ingredients

  • 1/2 cup green olives pitted (I like Castelvetrano olives) - you can use canned if that’s what you have

  • 1 cup kale, cleaned, deribbed and deveined, ripped into big pieces

  • 4 cloves garlic, chopped

  • 1 cup parsley, cleaned, loosely chopped

  • 1 cup extra virgin olive oil

  • Juice from 1/2 lemon

Instructions

  1. In a blender or food processor, blend garlic and olives. Add 1/2 cup olive oil, then add kale and parsley.

  2. Drizzle in lemon and remainder of olive oil to taste.

  3. Store in an airtight jar for up to one week.
