Warm Brussels Sprout Salad with Hemp + Pumpkin Seeds

If you are not a “salad” person, this warmed salad may change your mind! This salad is a detoxifying, hormone balancing, low starch side dish or main meal with added chicken or tofu.

Ingredients

  • 2 cups shaved Brussels sprouts (buy shredded or slice thinly after cutting off tops)

  • 2 cups red cabbage, sliced thinly

  • 1 tbsp extra virgin olive oil

  • 2 tbsp balsamic vinegar

  • 1/2 cup hemp seeds

  • 1/2 cup pumpkin seeds

  • 1/4 cup dried tart cherries

  • 1/4 cup flat leaf parsley, chopped

  • Lemon or orange squeeze

  • Sea salt to taste

Instructions

  1. Heat oil in a big skillet. Saute cabbage and sprouts until wilted.

  2. Add balsamic vinegar and stir.

  3. Toss with hemp seeds, pumpkin seeds, cherries, juice and sprinkle with parsley.

  4. Serve immediately.
