Chocolate Pumpkin Bars

These no bake bars are like an energy boosting rice cereal treat! You can whip these up when having a chocolate craving or PMS or stressing out - or all of the above. Pumpkin seeds are full of stress-supportive magnesium, iron and healthy fats while the dark chocolate has been shown to lower stress hormone levels!

Ingredients

  • 1/3 cup pumpkin butter (I like 88 Acres. You can also sub in almond or sunbutter)

  • 3 tbsp maple syrup

  • 1/2 tsp ginger powder

  • 1/2 tsp cinnamon

  • 1/2 cup pumpkin seeds

  • 1 1/2 cups puffed rice cereal (Arrowhead Mills or Nature’s Path)

  • 1 oz 85%+ dark chocolate (I like Divine or Hu or Lily’s which is sweetened with Stevia)

Instructions

  1. Mix butter, syrup, spices in a mixing bowl.

  2. Gently add puffed rice + pumpkin seeds. Pour into a parchment paper-lined 9X9 brownie pan (8X8 is fine too) and press down firmly with a spoon or spatula.

  3. Freeze for 30 minutes. Slice into 16 brownies and enjoy! Keep in the fridge for about 1 week or freeze.
