Fall cabbage slaw

Cruciferous veggies like cabbage and kale are the stars of this crunchy simple salad with just a bite of sweetness. Adding in high-fiber brassicas can help prevent cancer, balance estrogen and support detoxification essential for women’s health especially in midlife.

Ingredients:

  • 1 cup green or napa cabbage, sliced thin

  • 1 cup kale, torn into bite size pieces

  • 1 cup red cabbage, sliced thin

  • 1 green apple, cored, sliced thin (option to peel)

  • 1/4 cup tahini

  • 1 tbsp raw apple cider vinegar

  • 2 tbsp water

  • 1 tsp ginger, grated

  • Juice from 1/2 lime, squeezed

  • 1 tsp maple syrup

  • Pinch of sea salt to taste

Instructions:

  1. Mix cabbages and kale gently in a bowl.

  2. Toss in apple slices.

  3. Whisk together tahini, vinegar, water, ginger, lime juice.

  4. Drizzle over slaw and toss. Allow to sit for 15-30 minutes before serving.
